Project Overview

Edible landscaping or “foodscaping” is the integration of plants that have a direct or indirect use to humans into the designed landscape that will bring value to the land. The plants selected are climate appropriate sources of food and can be used for medicine, tea, fiber, erosion control, and water filtration. The edible landscape allows students to connect to the community and enrich their “sense of place”. This landscape provides education and awareness to the importance of the campus' local food movement, space utilization, energy and water savings, and other environmental benefits. The edible garden is located in front of Columbine Hall where it is visible and accessible to all students. Students can volunteer to help care for, pick and use plants.
